Creamy Ranch Cucumber Radish Salad

Ingredients

  • 1 English cucumber
  • 1 bunch radishes
  • 3 tbsp finely chopped fresh dill or 2 tsp dry dill
  • 1/4 cup chopped fresh chives or 1/2 cup thinly sliced green onion or scallions
  • 1/3 cup plain Greek yogurt or sour cream
  • 2 tbsp olive oil
  • 2 tsp apple cider vinegar or red wine vinegar
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • fresh ground black pepper to taste

Instructions

  • Slice cucumbers and radishes very thinly using a knife or mandolin.
  • Mix sliced veggies in a bowl.
  • In a separate bowl or quart mason jar whisk (or shake) the yogurt, olive oil, vinegar, honey, salt, garlic powder, and pepper.
  • Pour dressing over the veggies and toss to coat. Serve immediately.

Notes

  • Once the vegetables mix with the dressing, the cucumbers will begin to release liquid, so this salad is best eaten right after prepping
  • To make ahead, keep the dressing separate and store in an airtight container in the fridge. Mix with the veggies right before serving.
