Creamy Ranch Cucumber Radish Salad

Ingredients

English cucumber
1
bunch
radishes
3
tbsp
finely chopped fresh dill
or 2 tsp dry dill
1/4
cup
chopped fresh chives
or 1/2 cup thinly sliced green onion or scallions
1/3
cup
plain Greek yogurt
or sour cream

tbsp
olive oil
2
tsp
apple cider vinegar
or red wine vinegar
1
tsp
honey
1/2
tsp
salt
1/4
tsp
garlic powder
fresh ground black pepper to taste
Instructions
Slice cucumbers and radishes very thinly using a knife or mandolin.
Mix sliced veggies in a bowl.
In a separate bowl or quart mason jar whisk (or shake) the yogurt, olive oil, vinegar, honey, salt, garlic powder, and pepper.
Pour dressing over the veggies and toss to coat. Serve immediately.
Notes
Once the vegetables mix with the dressing, the cucumbers will begin to release liquid, so this salad is best eaten right after prepping
To make ahead, keep the dressing separate and store in an airtight container in the fridge. Mix with the veggies right before serving.
