- You can use a regular cucumber, just peel the tough skin. You can also use 4 mini cucumbers of any thin-skinned variety

- Any Greek yogurt will do! Full fat or no fat. You can also use sour cream! I like Greek yogurt for the extra protein.
Tips & Tricks for the Best Creamy Ranch Cucumber Radish Salad
- Use the right cucumber. Some varieties are crisper than others and have a thinner skin. Look for English Hothouse cucumbers or the mini ones that come in a bag.
- Make it right before serving. Once the veggies and dressing are mixed, the cucumbers will release liquid and become a soggy mess. If prepping ahead, wait to mix it all together. store the vegetables and dressing in separate airtight containers in the fridge and mix before serving.

Creamy Ranch Cucumber Radish Salad
Ingredients
- 1 English cucumber
- 1 bunch radishes
- 3 tbsp finely chopped fresh dill or 2 tsp dry dill
- 1/4 cup chopped fresh chives or 1/2 cup thinly sliced green onion or scallions
- 1/3 cup plain Greek yogurt or sour cream
- 2 tbsp olive oil
- 2 tsp apple cider vinegar or red wine vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp garlic powder
- fresh ground black pepper to taste
Instructions
- Slice cucumbers and radishes very thinly using a knife or mandolin.
- Mix sliced veggies in a bowl.
- In a separate bowl or quart mason jar whisk (or shake) the yogurt, olive oil, vinegar, honey, salt, garlic powder, and pepper.
- Pour dressing over the veggies and toss to coat. Serve immediately.
Notes
- Once the vegetables mix with the dressing, the cucumbers will begin to release liquid, so this salad is best eaten right after prepping
- To make ahead, keep the dressing separate and store in an airtight container in the fridge. Mix with the veggies right before serving.
