Nothing pairs better with some hot grilled meat on a bright summer day than some cool and crisp veggies. It’s warming up out there, and no one wants to spend these days slaving away in the kitchen. This little side dish comes together so fast, you won’t have time to say “creamy ranch and cucumber salad”. The creaminess of the yogurt mixed with fresh herbs and a touch of tangy sweetness, its hard to beat.

A true family favorite, this salad is a go-to in our home! Using a few simple and nutritious ingredients that you likely have on hand (or will from now on), you can have a refreshing side dish to accompany almost any main course.

What you’ll need…

  • 1 large English (hothouse) cucumber
  • 1 bunch of radishes
  • 3 tablespoons finely chopped fresh dill, or 2 teaspoons dry dill
  • 1/4 cup chopped fresh chives, or 1/2 cup thinly sliced green onion
  • 1/3 cup plain (unflavored & unsweetened) Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons apple cider vinegar, or red wine vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • black pepper to taste

Suitable Substitutions

  • You can use a regular cucumber, just peel the tough skin. You can also use 4 mini cucumbers of any thin-skinned variety
  • Feel free to use fresh or dry herbs, although fresh will yield the best results

  • Any Greek yogurt will do! Full fat or no fat. You can also use sour cream! I like Greek yogurt for the extra protein.

Tips & Tricks for the Best Creamy Ranch Cucumber Radish Salad

  • Use the right cucumber. Some varieties are crisper than others and have a thinner skin. Look for English Hothouse cucumbers or the mini ones that come in a bag.
  • Make it right before serving. Once the veggies and dressing are mixed, the cucumbers will release liquid and become a soggy mess. If prepping ahead, wait to mix it all together. store the vegetables and dressing in separate airtight containers in the fridge and mix before serving.

Creamy Ranch Cucumber Radish Salad

Ingredients

  • 1 English cucumber
  • 1 bunch radishes
  • 3 tbsp finely chopped fresh dill or 2 tsp dry dill
  • 1/4 cup chopped fresh chives or 1/2 cup thinly sliced green onion or scallions
  • 1/3 cup plain Greek yogurt or sour cream
  • 2 tbsp olive oil
  • 2 tsp apple cider vinegar or red wine vinegar
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • fresh ground black pepper to taste

Instructions

  • Slice cucumbers and radishes very thinly using a knife or mandolin.
  • Mix sliced veggies in a bowl.
  • In a separate bowl or quart mason jar whisk (or shake) the yogurt, olive oil, vinegar, honey, salt, garlic powder, and pepper.
  • Pour dressing over the veggies and toss to coat. Serve immediately.

Notes

  • Once the vegetables mix with the dressing, the cucumbers will begin to release liquid, so this salad is best eaten right after prepping
  • To make ahead, keep the dressing separate and store in an airtight container in the fridge. Mix with the veggies right before serving.
